I began my baking sojourn baking this cake. Super easy, and super simple. The taste is simply awesome and is as moist and fluffy as the egg versions. This version is not meant for the microwave!

Eggless Orange Cake
Before serving, squeeze a slice of orange on the piece of cake and serve

 

Dry Ingredients:

  •  All purpose flour 1 and 1/4 cup (I use a regular measuring cup, the same one for liquids and the powders)
  • Powdered sugar 3 tbsp
  • Baking powder 1 tsp
  • Baking soda 1/2 tsp

Wet ingredients:

  • Condensed milk Slightly less than a cup
  • Softened butter 1/2 cup
  • Orange juice 1/2 cup (you could either squeeze fresh orange juice, or use from a tetra pack. Both works, but the former is more flavoursome)
  • Orange zest (scraped orange peel): 1 tsp ( I used a bit more that 1 tsp, since I love oranges. But too much might just make your cake bitter. So stick to a max of 2 tsp.)
  • Vanilla essence 1 tsp (If you have orange blossom water or orange essence, I think it might work too)

Preparation and baking: ( 45 minutes)

  • Pre-heat the oven to 180 C.
  • Sieve all the dry ingredients into a mixing bowl and keep aside.
  • In a separate bowl, whisk together all the wet ingredients. Whisk until the butter has combined uniformly.
  • Pour the liquid mix into the first bowl and whisk again ensuring that no lumps are formed.
  • Lightly grease your cake mould and dust a tbsp of flour on it using a sieve.
  • Pour the cake batter into the mould and bake for 30 mins.
  • Insert a fork or a toothpick into the centre of the cake. If it comes out clean, your cake is ready.
  • Invert the cake on to the wire rack and let cool.
  • Before serving, squeeze a slice of orange on the piece of cake and serve.
  • Works well even without icing/frosting.
